Through direct relationships with producers, close oversight of the roasting process at their roastery in Sofia, and a sourcing program built over more than a decade alongside the Cup of Excellence and the Alliance for Coffee Excellence, they oversee nearly every stage of the coffee journey. This level of involvement allows them to offer a selection and consistency that few coffee shops can match.
Their menu regularly features four to five Cup of Excellence-winning coffees, alongside Best of Panama selections and an extensive collection of Geishas, giving guests access to some of the highest-scoring and most sought-after coffees in the world.
To showcase these coffees at their best, their coffee bar combines world-class products with cutting-edge technology. They operate state-of-the-art espresso systems using two distinct extraction technologies, supported by seven dedicated grinders for maximum precision and consistency. They also serve cold brew prepared with Hardtank technology, available both still and on nitro.
