Histórico café y tostador is a space dedicated to Chiapas coffee from its origin. Located in San Cristóbal de las Casas, it is part of Finca Hamburgo (founded in 1888) and represents the urban continuity of its coffee legacy, connecting land, history, and cup in a single experience.

At Histórico, every stage of the process is an essential part of the journey: the coffee is grown on the farm, selected with traceability, roasted in-house, and served at a specialty bar where detail and technique are the protagonists. Their roaster is visible, knowledge is shared, and origin is not a discourse: it is daily practice.

The space integrates a specialty bar, a Mexico-Mediterranean cuisine restaurant, Mamá Higo artisanal bakery, a coffee shop and accessories store, as well as CAFETALES HAMBURGO INSTITUTE (CHI), a coffee school where courses, workshops, and experiences such as “From field to cup” and guided tastings are held. Everything coexists in one place, creating an immersive experience around coffee.

More than a coffee shop, Histórico is a cultural and sensory meeting point that celebrates Chiapas coffee with identity, hospitality, and purpose. Here, the farm continues in the city. Here, coffee is not just served: it is understood, shared, and lived.
